Ingredients:

  • 1 kg minced beef or lamb
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 slices bread, soaked in milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 cup chutney
  • 2 tbsp apricot jam
  • 1/4 cup raisins or sultanas
  • 2 eggs
  • 1 cup milk
  • Bay leaves for topping
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Sauté onions and garlic in a large pan until softened.
  3. Add minced meat and cook until browned, breaking it up with a spoon.
  4. Drain off any excess fat.
  5. Squeeze excess milk from the soaked bread and add the bread to the pan.
  6. Stir in curry powder, turmeric, ginger, cloves, chutney, apricot jam, and raisins.
  7. Season with salt and pepper.
  8. Simmer for 15 minutes, stirring occasionally.
  9. In a separate bowl, whisk together eggs and milk.
  10. Pour the meat mixture into a baking dish and top with bay leaves.
  11. Pour the egg custard over the meat.
  12. Bake for 30-40 minutes, or until the custard is set and golden brown.
  13. Let it rest for 10 minutes before serving.

Serving Suggestion: Serve with yellow rice, chutney, and sliced bananas for a complete South African feast.

Potjiekos: A Traditional Stew

Ingredients:

  • 1.5 kg lamb, cubed
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 400g canned chopped tomatoes
  • 500ml beef stock
  • 1 tbsp dried mixed herbs
  • 2 bay leaves
  • Oil for cooking
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a potjie pot over medium heat.
  2. Brown the lamb in batches and set aside.
  3. Sauté onions and garlic until softened.
  4. Add carrots, potatoes, and bell peppers, and cook for 5 minutes.
  5. Return the lamb to the pot.
  6. Add canned tomatoes, beef stock, mixed herbs, and bay leaves.
  7. Season with salt and pepper.
  8. Bring to a simmer, then reduce heat and cover.
  9. Cook for at least 3 hours, or until the lamb is tender, stirring occasionally. Ensure there's enough liquid; add more stock if needed.
  10. Serve hot directly from the potjie.

Serving Suggestion: Enjoy with crusty bread or pap (maize porridge) for soaking up the delicious sauce.

Roast Chicken with Peri-Peri Sauce

Ingredients:

  • 1 whole chicken (about 1.5 kg)
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 2 cloves garlic, minced
  • 1 tbsp peri-peri sauce (or more, to taste)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Assorted vegetables for roasting (potatoes, carrots, onions)

Instructions:

  1. Preheat oven to 200°C (400°F).
